pumpkin seed pesto

I ran out of pine nuts to make pesto, so I used toasted green pumpkin seeds (pepitas) instead... and the result? It was really yummy! I didn't actually follow an exact recipe... just blended together the seeds, a big bunch of basil, a garlic clove, some olives, parmesan and olive oil... oh yes and topped the whole dish with crumbled goat cheese (cause anything with goat cheese on it is yum) and ta-da!... dinner is served. Maybe I will try toasted almonds next time.... hmmmm.

  1. Oh yum! I love pine nuts, but the pumpkin seeds sound like a delicious twist. You cannot go wrong with goat cheese. It's 8:50 a.m. and you've got me drooling over pasta! We made a very simple pasta dish last night, mostly broccoli, garlic, rigatoni. Some olive oil and fresh parmesan. I'm a tomato sauce lover , but surprisingly I enjoyed the simplicity of this. Dev and I are both Italian, so we're working on becoming better cooks--both of our families are really talented in the kitchen, so you can imagine the pressure ;)
